I recently got an email from Wayfair about entering their Battle of the Pies and I was sold before I even read the whole thing. Something about this fall has really brought out the domestic side of me. I am already pretty domestic but lately I have been borderline obsessive. I have been baking and cooking and freezing food for the last month with no signs of tiring out or getting bored. I’ve made soups, jams, pickles, crisps, brownies, muffins, and pies! My husband was thrilled at first but at this point I think he is starting to wonder if I need an intervention to save our grocery budget.

And then I got the email. And then I made this peanut butter banana pudding pie. And my husband had no complaints as he licked his fork clean. I’d like to think it was because he realized my recent baking craze had prepared me for thiiiiiiiiiis moment.

With out further ado, here is my entry in all her sweet, slightly peanut buttery, wonderfully banana-ish glory.

Peanut Butter Banana Pudding Pie

Yield: Two 9″ pies + extra pudding filling

2 2/3 c. crushed vanilla wafer cookies, divided
1 stick butter, divided, melted
1/2 c. sugar, divided

Preheat oven to 375 F. In two bowls combine 1 1/3 c. crushed cookies, 4 Tbsp. melted butter, and 1/4 c. sugar. Mix well. Press into bottom and sides of a 9″ pie dish. Bake 5 minutes. Cool completely.

TIP: Use the bottom of a drinking glass to press the crust into the dish. I tried using my hands on one pie and a glass on the other. The glass was easier and less messy!

Filling: adapted from my favorite banana pudding recipe, here
8 oz. cream cheese, at room temperature
1/3 c. smooth peanut butter, at room temperature
1 can (14 oz.) sweetened condensed milk
1 package (5 oz.) instant vanilla pudding mix
3 c. cold milk
1 tsp. vanilla
1 tub (8 oz.) whipped topping, thawed, divided
2 bananas

In a medium bowl beat together cream cheese and peanut butter until combined. Add sweetened condensed milk, pudding mix, milk, and vanilla. Beat until smooth. Fold in half the whipped topping.

TIP: If you can’t get the pudding smooth try an immersion blender. “Room temperature” in the cooler months can still be too cold to get the cream cheese really smooth but the immersion blender got all my lumps out, quickly!

TIP: Forgot to thaw your whipped topping? Remove the lid, place in microwave, and defrost it for 30 seconds. Gently stir and defrost in 10-20 second intervals, stirring gently after each, until it is thawed.

To assemble the pie, slice 1 banana and place the slices evenly across the bottom of a cooled cookie crust. Pour half the pudding mixture over the bananas. Top with half the remaining whipped topping. Garnish with crushed cookie crumbs. Repeat with second pie crust. Chill before serving.

We had these at a Chinese New Year party we hosted earlier this year.  They were phenomenal!  I have never been the lettuce wrap type girl.  Okay, to be honest, I’ve never been a huge Chinese food fan in general.  BUT…. These have been on our dinner menu every single week since I got the recipe from Fitritious Life.  I have since tried a few different lettuce wraps at different restaurants.  These copy cat lettuce wraps are better.  I will never pay for them at dinner again.  They are that good.  I took the original recipe and tweaked it just a little bit.  We are on a health food binge right now at my house, so we load those puppies up with all sorts of veggies.

 Serves: 4-6, Prep time: 10 minutes, Cook time: 20 minutes

1 lb. ground chicken breast

½ yellow onion chopped

2 garlic cloves, minced

1” knob ginger (I used 2 T. of the stuff in the tube.  Easy.)

3 green onions, chopped

1 can (8 oz) of sliced water chestnuts, drained

2 large carrot shredded

1 small can of mushrooms

1 cup of cabbage, shredded

1 ½ T. rice vinegar

2 ½ T. Soy sauce

1 T. sesame oil

2 T. Chunky peanut butter (smooth is fine too, but chunky definitely livens it up!)

½ T. water

1 T. honey

1 ½ teaspoons chili sriracha sauce

salt and pepper to taste

1/4 cup of preferred chopped nuts ( I love cashews, peanuts or almonds)

10-12 large outer lettuce leaves, rinsed and patted dry

In a large, non-stick skillet, cook ground chicken, and yellow onions.  Add a dash of salt and pepper.  Cook until nearly done, stirring often to break up meat.

Add garlic and ginger, cooking until chicken is done and no longer pink.

In a microwaveable bowl, combine rice vinegar, soy sauce, peanut butter, water, honey, chili sauce and  a dash of pepper.  Microwave for 20 seconds and then stir.

Add soy sauce mixture to the meat in the skillet and stir to combine.  Add the remaining veggies and cook for an additional 3 minutes, or until the veggies are heated through.

Sprinkle with your choice of chopped nuts and serve with cold lettuce leaves.

This is a great, quick, healthy weeknight meal.  We usually cook up some quinoa and throw it in the lettuce along with the chicken.  These are devoured within minutes at our house.  They are so delicious.

I am not a baker.  Not that I don’t like baking, I am just not good at it.  I have never successfully made a batch of chocolate chip cookies.  Ever.  I tried to make Briton’s amazing french bread—fail.  I also tried her easy overnight bread… it tasted good but I may or may not have melted kitchen appliances in the process.  So when my neighbor Kjell (and fellow blogger from fitritiouslife.com) shared some homemade rolls with me, I was suuuper nervous to try making them myself.  But, guys, they were SO easy.  And they are heaven.  Seriously.  Like, light, fluffy, buttery, delicious, little pillows of heaven.  The best part?  They only take 60 minutes from start to finish.  Try these, ladies.  Take them to parties, dinners, church functions…. You will be loved.  A lot.

First, you will combine the powdered milk, water, sugar, butter and salt into a microwaveable bowl.  Throw it in the microwave until its warm (like the temperature of a baby’s bottle).After its warm, add the yeast and beaten egg.  Stir a little bit and let it sit for 5 minutes.  The yeast will start to proof (get bubbly and foamy). Mix in the flour until it is smooth.  Cover and let it rise (about 20 minutes).

Dump out dough onto a lightly floured surface. Divide in to 4 sections.  Roll out one section at a time in to a circle shape.

Cut the dough like pizza slices.  Roll each section like a crescent roll.  Place on a greased cookie sheet.  Repeat with all sections of the dough.

Bake at 375 degrees for 10 minutes or until the rolls are a light brown.  Brush with butter and try not to eat all of them in one sitting.  Seriously, they are that delicious.


Quick and Delicious Dinner Rolls- Makes 4 dozen rolls (or you can half it like I do for 24)


2/3 C. powdered milk

2 ½ C. of water

½ C. sugar

½ C. butter or margarine

2 tsp. salt

2 eggs well beaten

2 Tbsp. dry instant yeast

7 C. flour

Mix the milk, water, sugar, butter and salt in a bowl and warm in the microwave for 2-3 minutes.After mixture is heated, add eggs and instant yeast.  Stir briefly.  Let stand 5 minutes. After yeast is proofed, stir in flour and mix with a large spoon until smooth. Cover dough and let it rise until it doubles in size (about 20 minutes). Dump dough on to lightly floured surface.  Divide in to 4 equal sections.  Roll section out into circle.  Cut circle in to pizza like slices.  Roll each slice up like a crescent and place on a greased baking sheet.  Repeat with all sections of dough. Let rolls rise again for 20 minutes. Bake at 375 for 10 minutes or until light brown.  Brush with butter and enjoy!
