SUMMER SALAD SERIES: week 11

Every Wednesday, from Memorial Day to Labor Day, is dedicated to one killer salad to take to your next BBQ and add to your recipe book.

You know how sometimes you’re just rolling through life thinking, “Man!  Everything is really great right now!”  and then, wham, life gives you major lemons?  I have a Costco size bag of lemons and am hopefully entering the make lemonade part of the last few weeks.  I started by going to my neglected community garden plots.  Lots of dead plants, weeds taller than me, and tons of grass BUT the tomatoes didn’t turn their backs on me and I had enough basil to make one of my favorite salads.  The beautiful and totally delish caprese salad.

Caprese Salad

1 large or a few small tomatoes {preferably straight from a tomato plant!}
fresh mozzarella
5-6 fresh basil leaves
olive oil
balsamic vinegar reduction

To reduce the balsamic vinegar: pour some into a small saucepan.  Heat over medium high heat until it begins to boil.  Reduce heat to medium or medium low and swirl or stir until it just starts to thicken and coat the pan or spoon.  Remove from the heat and let cool while you prep the salad.

Slice the tomato into 5-6 thick slices.  Slice the mozzarella into 5-6 thin slices.  Arrange the tomato and mozzarella slices around a plate by alternating them.  Top with basil leaves.

Drizzle the salad with olive oil and balsamic reduction.  Season with freshly ground salt and pepper.
