Every Wednesday, from Memorial Day to Labor Day, is dedicated to one killer salad to take to your next BBQ and add to your recipe book.

I love pairing mint with citrus fruits, it’s so fresh and summery.  It’s a happy combination.  I grow mint in my garden.  If you’re familiar then you know how much it loves to spread and grow and take over.  Mine isn’t out of control…yet.

Strawberry, Orange and Grapefruit Salad with Honey Mint Dressing

salad-
1 lb. strawberries
1 grapefruit
2 navel oranges

honey mint dressing-
1/2 c. honey
juice of 1 lime
1/4 c. fresh mint, cut in skinny strips
zest of one lime

Hull and slice strawberries, add to a bowl. Slice the ends off the grapefruit and orange, use a sharp knife to carefully remove the peel and pith (white part). Over the bowl, segment grapefruit and orange.

Zest the lime. Measure honey and lime juice in a glass measuring cup, add mint and zest. Whisk to combine, gently muddling mint a bit.

Pour dressing over fruit, cover and refrigerate several hours to allow flavors to combine. Serve using a slotted spoon! There will be a lot of dressing- feel free to add more fruit and try other combinations- blueberries, cherries, kiwi, peaches, and nectarines would all be wonderful!
